Aside from Dak'kon and Nordom, you can uprgrade 2 NPC's taht I know of: Morte and Annah. For Morte, talk to him after you pull him out of the pillar of skulls or talk to Grace and do it earlier. To upgrade Annah, you need to kiss her and she gains a little fire resistance. Trist: Did Lenny give you a password? You need to say it to the big floating head in the warehouse.
